Omega 3 Chia milled flour is a stealth health approach to great nutrition.

Blueberry Pancakes

2 tablespoons Omega 3 Chia® milled flour
¾ cup of orange juice
2 eggs separated
2 ¼ teaspoons baking powder
1 ½ cups whole wheat flour
¾ teaspoon salt
3 tablespoons honey, agave or brown sugar
1 cup of milk or soy, almond or rice milk
3 tablespoons melted butter
1 – 1 ½ cups of fresh blueberries
In a small bowl, beat egg whites until stiff; set aside
In a separate bowl, sift together O3C milled flour, whole wheat flour, baking powder, sugar and salt.
Beat egg yolks in a medium bowl; add milk and butter.
Stir egg mixture into dry ingredients; mix until batter is smooth and carefully fold in blueberries and beaten egg whites.
Prep the griddle with cooking spray and when the griddle is hot, pour batter to form pancake.
Top with extra blueberries and pure maple syrup.

Chicken Broccoli Casserole

2 -3 heads of fresh broccoli or 3 pkgs of frozen broccoli
6 cooked boneless chicken breasts
3 cans of condensed cream of chicken soup
1 ½ cups of Mayonnaise or Greek yogurt and mayonnaise mixture
2 teaspoons lemon juice
6 tablespoons of sherry
¾-1 cup shredded sharp cheese
4 tablespoons Omega 3 Chia® milled flour or whole seed
¾ cup bread crumbs
2 tablespoons melted butter
Arrange broccoli florets in 9” x 13” pan or large flat casserole dish.
Cut chicken in large bite size pieces and place over broccoli.
Mix together soup, mayonnaise, lemon juice, sherry, and O3C whole or milled seed and pour over broccoli and chicken. Sprinkle with cheese, then crumbs and drizzle the melted butter over the top.

Bake covered at 350 degrees about one hour, until bubbly and very hot.
Serves 8

Chia Muffin Recipe

This recipe was handed down by an elderly English woman who was befriended by an American woman studying in London in 1979. Chia has since been added to the recipe by our American friend. Enjoy!

1 2/3 cups all purpose flour (you can substitute soy flour, following the equivalency)
1 cup granulated sugar (we still use sugar or agave over chemical substitutes)
1 tablespoon pumpkin pie spice

1 teaspoon baking soda

4 tablespoons Omega3Chia whole seed or milled flour or a combination of both

¼ teaspoon baking powder
¼ teaspoon salt
2 large eggs
1 cup plain organic pumpkin (half of a 1 pound can)
½ cup (1 stick) butter, melted
1 – 1 ½ cups dark chocolate morsels
Heat oven to 350 degrees. Spray muffin tin with Pam or use paper baking cups. Mix all ingredients in a bowl beginning with the dry ingredients. Prior to adding the morsels, use a hand mixer on low speed to blend batter. Stir in chocolate morsels by hand. Scoop batter evenly into muffin tins/cups. Bake for 20-25 minutes. Test with a toothpick until springy. Immediately remove muffins and place onto a cooling rack. Muffins can be frozen in an airtight container or kept in a plastic bag for 2-3 days.

Yield is 12 muffins.

Omega 3 Chia is a great way to begin to address the nutritional concerns of children. Children can be finicky in their eating and with the marketing of many junk food manufacturers; it can be difficult making the healthier foods the first choice. Go slow and be patient with your children as you steer them towards better eating habits. Tell stories and fun facts about Chia to pique their interest. Ground Omega3Chia added to many recipes will not alter the taste of the food.

Chia Battered Fish Sticks and Chicken

2 tablespoons Omega3 China ground (milled flour)
1-1/2 cups Italian or Panko breadcrumbs
1-1/2 cups soda water
1 egg
12 ounces of white fish cut into 1” strips OR
12 ounces of skinless boneless chicken breast, cut into 1 “ strips
½ cup Worcestershire sauce or hot sauce
Salt and pepper to taste
Favorite dipping sauces
Mix together ground (milled Omega3 Chia), 1 cup of flour and a pinch of salt. Add the soda water. Using a whisk, mix well until smooth. Add the egg yolk and mix well. Add the beaten egg white and place into refrigerator for at least 2 hours. Mix the Worcestershire sauce or hot sauce together with your fish or chicken strips. Allow to marinate for at least 10 minutes. Roll fish or chicken in the ¾ cup of flour. This will help hold the batter onto the strips. Put the strips into a heavy frying pan with some oil. Cook until done.

Why is “traceability” so important?

Traceability is so important because people need to know where the food product was grown, how it was harvested, were there any chemicals, pesticides used and how the product was cleaned before packaging.

We at Omega 3 Chia emphasize that our chia has complete traceability.  And we have the agricultural certifications that the seed is grown specifically for human consumption.  There are no chemicals or pesticides used on our chia. You can literally walk through the chia fields and eat the seed from the plant.

What is partially defatted chia flour/bran?

This process is where the seed is pressed, using a cool temperature process to extract the oil.  A by-product of the chia oil is the partially defatted chia flour aka bran.  The shelf life of the chia oil is approximately 24 months.  Refrigeration is recommended.  The shelf life of the partially defatted chia flour is also approximately 24 months and should be refrigerated.

What is Cold Milled Chia Flour?

Cold milling is a process where the seed is milled at a temperature so the nutrients are not destroyed.  The shelf life of the cold milled chia flour is approximately 24 months. Remember, that anytime a seed is crushed the oxidation process begins.  This is important when considering a “milled” seed product.  Milled chia flour should be refrigerated.

Frequently Asked Questions about Chia

We receive many phone calls and emails from people asking the following questions.  The following will help you when looking for chia.

1) How do I choose which chia product to buy? Look for certifications that tell you the chia is grown for people to consume; such as GAP (Good Agricultural Practices), GMP (Good Manufacturing Practices), NON-GMO (not genetically modified), and Kosher certified.

2) Should chia have sand, stems etc.? NO.  If the chia product has debris this could be an indicator that the seed was grown for animal feed and not safe for people to eat.

3) Does chia need to be refrigerated? No, the whole seed does not need to be refrigerated.  The whole seed has a shelf life of at least 5 years. The milled/ground chia needs to be refrigerated and has a shelf life of approximately 2 years.  Remember, that anytime a seed is crushed or broken the oxidation process begins.

4) How much chia should I take on a daily basis? The recommended daily amount is between 15 grams – 22 grams ( 1 1/2 Tbsp. – 2 Tbsp.).

5) Can I take chia if I am currently taking medications? You should always consult your physician.  But remember that chia is a seed and classified as a food by the USDA.

6) Should I grind the chia seed or buy a milled/ground chia? It depends on the individual’s preference. The milled chia seed is more “bioavailable” in the intestinal tract. 

7) Can I use chia in other foods? Chia can be used in all kinds of food, such as yogurt, oatmeal (during cooking or stirred in before eating), smoothies, baked goods, meat sauces; basically you can put chia into any of your favorite recipes.  Chia will lose some of it’s nutrient value if cooked at temperatures above 350 degrees Fahrenheit.


8) Can I give chia to my pet? Yes. Our bodies, (including pets) do not make or store EFA (essential fatty acids:omega-3′s, 6′s and 9′s) so we need to eat foods rich in EFA’s.  And chia is an alternative to fish oil.
